Roasted Butternut Squash Salad (remember to use leftovers, made-ahead or frozen veggies to make these more time efficient)
Swiss Chard and White Bean Grilled Sammie (or un-grilled if you’re at work)
Ultimate 4-layer Vegan Sandwich (you can also do it without the pesto {but why would you?})
50 Vegan Sandwiches (there were fun to read through. Bottom line: anything goes!)
You can also do a sandwich as a wrap: Kale and Hummus Wrap. Again, anything goes.
